Greek Chicken: Place sliced russet potatoes in a roasting pan. Sprinkle Greek seasoning over potatoes. Sprinkle extra virgin olive oil and lemon juice over potatoes. Place chicken peices on top. Repeat with Greek seasoning, EVOO and lemon juice, and zest of 2 lemons. Roast at 425 degrees for 1 hour until largest chicken piece reaches an internal temperature of 165 degrees. Remove chicken pieces, and continue roasting potatoes on top rack at 500 degrees, checking every 10 minutes until caramelized. OPA!
